Key themes on this year’s IFT Food Expo show floor included the growing range of available alternative proteins. The industry has moved far beyond soy, wheat and pea proteins, with other solutions on display this year including chickpea and almond protein. But the dairy protein space is innovating too, through the launch of new delivery options for health ingredients, such as protein pods. The consolidation within the North American suppliers space was salient, with integration programs in place at major players such as Ingredion. Bolt-on moves have also been the order of the day, with Sensient’s acquisition of Mazza Innovation and IFF’s integration of PowderPure illustrating how technology moves hold strong development potential throughout a much larger entity.
